White Chocolate Cranberry Oatmeal Cookies

These turned out amazing.  Crunchy, but in a good way, and sweet.  I used a little too many white chocolate chips so the sugar is a bit overpowering, but they are still yummy!  

  • 3/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 1/2 cups quick-cooking oats
  • 3/4 cup dried cranberries
  • 6 ounces white chocolate chips


Preheat oven to 375 F.  Line baking sheets with parchment paper or grease.  In a large bowl or mixer combine the sugar, brown sugar and butter; mix well to cream together.

Add in egg and vanilla extract and mix until well combined

Add the cinnamon, baking soda, salt and flour and mix well.

Fold in the oatmeal, dried cranberries and white chocolate chips, making sure that all ingredients are uniformly distributed.

Roll dough into 1-inch balls and place 3 inches apart onto the prepeared cookie sheet.  Bake at 375 F for 10-12 minutes, just until the edges are lightly golden.  

These cookies were pretty soft when I took them out of the oven and I overcooked one batch so make sure to take them out right when they turn brown.  Enjoy!



  1. Yummm! These sound DELICIOUS! I really love oatmeal butterscotch cookies. Sounds like a weird combo but they are really good. I wish I lived with you so I could eat all your yummy food!!! I hope Frenchie appreciates this!!
